Resistant maltodextrin’s effect on the physicochemical and structure properties of spray dried orange juice powders

چکیده

Resistant maltodextrin (RMD), derived from the heat treatment of corn starch, is a water-soluble fermentable functional fibre. Its benefits include being satiating prebiotic, reducer glucose and triglycerides in blood, promoter good gut health. Despite its functionality, there still further need for investigations use as food formulating ingredient their physicochemical property changes. This study aimed to evaluate effect RMD addition on structural properties spray-dried orange juice powders. The evaluated were water content, hygroscopicity, bulk density, porosity, solubility, absorption index, colour, microstructure. We found improved powder productivity. Samples with more porous less hygroscopic, they presented low content; desirable Therefore, reach compromise between powders’ functionality changes, especially 5 RMD% recommended.
